A small batch kombucha, Wunder-Pilz is a tasty cultured beverage made from a mixture of all organic tea, herbs, vegan cane sugar and premium filtered water. Unlike many commercial kombuchas available today, Wunder-Pilz Kombucha is a crisp, tart, dry not sweet fully fermented kombucha. Each flavor we produce is fermented seperately with a unique herbal and tea formula, resulting in a range of flavor profiles that are as distinct as wine made from different grape varietals or beer from different grains.
Kombucha is a refreshing alternative to sugar laden drinks, with a range of beneficial acids and probiotics . Because of the nature of the culture itself there can be trace amounts of alcohol present, much like non-alcoholic beer or fruit juice.
Wunder-Pilz is not bottled and is sold exclusively on tap to maintain freshness, minimize our waste stream and to encourage reuse of existing containers. We store our kombuhca in stainless steel kegs and dispense through all stainless hardware as stainless steel is the only safe metal for handling kombucha due to it's low pH. We offer quality jugs and bottles for purchase at all our locations around town. The aim of Wunder-Pilz is to consistently produce delicious beverages that mix the health benefits of kombucha with the specific energetic and healing properties of organic herbs. Founded in 2010, Wunder-Pilz Kombucha takes it's name from a German word for kombucha. Wunderpilz translates literally to 'miracle mushroom'. Pils with an 's' refers to a style of beer not a mushroom.
*Li Ching-Yuen was an herbalist and martial artist and purportedly had lived an extrodinarily long life when he passed away in 1933. His famous response (above) to being asked the secret of his long life was the inspiration for the four varieties of kombucha we produce. By qualitatively categorizing his response and with the help of a friendly Acupuncturist and Herbalist, we set out to test various combinations of herbs and teas in an attempt to match those same qualities with our ingredients. We think the resulting combinations are as effective and interesting as they are delicious and we think you'll agree!
